Asparagus Goat Cheese Frittata

  • 1 tablespoon olive oil
  • 1 ½ cups sliced mushrooms
  • 16 medium asparagus spears cut into 2-inch chunks
  • 12 large eggs
  • ½ cup heavy cream
  • Salt and pepper
  • 4 ounces goat cheese

Instructions

Instructions:

  1. Preheat the oven to 375°F and heat the oil in a 10-inch cast-iron skillet.
  2. Add the mushrooms and asparagus, cooking until tender, about 6 to 8 minutes.
  3. Whisk together the eggs, heavy cream, salt and pepper in a bowl.
  4. Spread the mushrooms and asparagus in the skillet and pour in the egg mixture.
  5. Crumble the goat cheese over top then bake for 15 minutes or until the eggs are cooked through.
  6. Cool for 5 to 10 minutes then slice to serve.
