  • 1 medium avocado
  • 2 large eggs
  • Salt and pepper
  • Fresh chopped chives

Instructions

Instructions:

  1. Preheat the oven to 425°F.
  2. Cut the avocado in half and remove the pit.
  3. Scoop some of the flesh out of the avocado then place the two haves cut-side-up in a small baking dish.
  4. Crack an egg into each avocado half and season with salt and pepper.
  5. Bake for 15 to 20 minutes until the eggs are done to your liking.
  6. Garnish with fresh chopped chives to serve.
