  • 1 teaspoon olive oil
  • 1 ½ cups sliced mushrooms
  • ¾ pound brussels sprouts quartered
  • 2 tablespoons water
  • 3 large eggs
  • Salt and pepper
  • 2 tablespoons grated parmesan cheese



  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the mushrooms and cook until they are browned then stir in the brussels sprouts.
  3. Pour in the water then cover the skillet and cook until the brussels sprouts are tender, about 5 minutes.
  4. Spread the mushrooms and brussels sprouts evenly in the skillet.
  5. Make 3 depressions in the mixture and crack an egg into each one.
  6. Season with salt and pepper then cook, covered, for 5 minutes or until the eggs are done to your liking.
  7. Sprinkle with parmesan cheese and serve hot.
