  • 12 slices deli ham
  • 1 small red pepper diced
  • ½ small green pepper diced
  • 12 large eggs
  • Salt and pepper

Instructions

Instructions:

  1. Preheat the oven to 400°F and grease a muffin pan with cooking spray.
  2. Line each muffin cup with a piece of sliced ham.
  3. Divide the chopped peppers among the 12 muffin cups.
  4. Beat the eggs then pour them into the muffin pan and season with salt and pepper.
  5. Bake for 12 to 15 minutes until the egg is cooked through. Serve hot.
