Eggs Fried in Bell Peppers

- 1 teaspoon olive oil
- 1 medium bell pepper cut into rings (use 2)
- 2 large eggs
- Salt and pepper
Heat the oil in a medium skillet over medium heat.
Add the bell pepper rings and cook for 1 to 2 minutes on each side.
Reduce the heat to medium and crack an egg into each ring.
Season with salt and pepper then cook for 3 minutes or until the eggs are just set.
Cover and cook until the eggs are done to your liking. Serve hot.
