  • 1 teaspoon olive oil
  • 1 medium bell pepper cut into rings (use 2)
  • 2 large eggs
  • Salt and pepper


  1. Instructions:
  2. Heat the oil in a medium skillet over medium heat.
  3. Add the bell pepper rings and cook for 1 to 2 minutes on each side.
  4. Reduce the heat to medium and crack an egg into each ring.
  5. Season with salt and pepper then cook for 3 minutes or until the eggs are just set.
  6. Cover and cook until the eggs are done to your liking. Serve hot.
